You can paint formica, but you will need to use a special primer first. Zinsser makes a good one for formica cabinets and such. Be sure to read the directions because you have to let it cure for a few says before applying the paint over it. Would suggest you use an acrylic based paint. Glidden makes one called All Siding. It works well.
You could also use stainless steel. They make peel and stick stainless steel for backsplashes. It is very modern looking, brightens and updates your kitchen. Is thin and easy to cut.
