Cleaning white perch can be a little tricky especially with the smaller fish. Like any fish you will need to properly trim, skin and cook the fish. You will want to remove the skin and proceed to trim the fat from the fish's belly flap, along the back, the line seen along the sides, as well as from under the skin. It is healthiest to eat the fish with all the fat trimmed.
Typically you will need to slice the belly of the fish from the point where the gills touch the head right to the anus. Remember to take care not to cut too deeply as you could pierce the digestive system.
