Are you looking to plant them in the spring and summer or in fall? The best time of the year to plant vegetables in this part of the country is believed to be the months of May and June. Though in North Carolina the dates for planting vegetables can be anywhere between the first fifteen days of April in the Western parts the month of May is considered best. Planting can however be extended to as far ahead as early July. Vegetables are generally planted in different time lots. In this way a regular supply is maintained and not all are harvested at once. The harvest dates vary from around late July to October before the frost sets in.

If you are looking to plant in fall then beets can be planted from mid July to Mid August, Cabbage in the first fifteen days of August, Carrots the first fifteen days of July, Lettuce last fifteen days of August etc.
